When faced with rolling out a large amount of Lavash dough (8 Kg) I
used my old hand crank pasta rolling machine. It makes strips of
dough about 6 1/2 inches wide which can be cut to length with a
roller or bench knife. It took about the baking time to roll out a
pan full of Lavash so the process went quickly. As I recall I used
the #1 or #2 setting, however, there is variation between machines so
experiment with the thickness. The Reinhart version of the dough,
which I used, is not too stickey and rolls easily if lightly dusted with flour.
