I use a bread machine for the first 15 minutes, (a wet dough with a small amount of yeast) just long enough to mix it, then I turn the machine off and let the dough rise overnight (like the New York Times bread). In the morning I shape 3 loaves, let it raise a second time (35 to 60 minutes) then bake for about 35 minutes in my oven. Doesn't any one else do this?? Diana Pancioli
