I also put bread (I inevitably bake more than we can eat) in the freezer in a zip lock and then just defrost it in the ziplock. If the crust is intact there is no freezer burn or shrinkage. After defrosting I generously spray the bread all over with water and place in a 400 F oven for 6 minutes. The bread comes out warm and crusty and is just like a bread 1 hour after baking. Delicious!
