2 eggs
1 cup sugar
1 cup eggnog -- dairy (not canned)
1/2 cup margarine or butter -- melted
2 teaspoons rum extract
1 teaspoon vanilla
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon nutmeg
1. Heat oven to 350F. Grease bottom only of 9x5" loaf pan.* Beat
eggs in large bowl. Add sugar, eggnog, margarine, rum extract and
vanilla; blend well.
2. Add flour, baking powder, salt and nutmeg; stir just until dry
ingredients are moistened. Pour into greased pan.
3. Bake at 350F. for 45 to 50 minutes or until toothpick inserted in
center comes out clean. Cool 10 minutes. Remove from pan. Cool 1 hour
or until completely cooled. Wrap tightly and store in refrigerator.
*Bread can be baked in three 5 3/4x3 1/2" disposable foil or metal
loaf pans. Bake at 350F. for 35 to 40 minutes.
