Michael, I can't speak for the Publix challah since I haven't tried it. But if you can't get that recipe, might I suggest Maggie Glezer's book, "A Blessing of Bread?" She won the James Beard Award for that book. She has quite a selection of challahs in the book, from soft and billowy to firmer ones, richer to leaner loaves. I've made them all and I think you might find the consistency you'd like in one of them, or even one you would prefer. Rita
