Tuscan bread is salt free, which distinguishes it from other types of Italian bread. As Peter Reinhart notes in The Bread Baker's Apprentice, Tuscan bread is flat tasting, "making it a good vehicle for intensely flavored spreads and pastes, or eating it with full-flavored dishes, such as garlic- and olive-oil-infused white bean soup."
