Cornbread, Green Chili

Amount Measure Ingredient -- Preparation Method

1 cup cornmeal
1 cup whole wheat pastry flour
2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
6 ounce vegan sour cream
1/4 cup canola oil
1/2 cup soy milk
1 small can diced green chilis -- (4 oz.) mild
Lightly oil a 9" x 9" square pan. Set aside.
Preheat the oven to 400F.
Add all of the ingredients to a large bowl.
Mix well but just until blended.
Pour into the prepared pan.
Bake at 400F for 25 minutes or until a toothpick inserted in the
center comes out clean.
Cool 10 minutes.
Slice and serve.
TO FREEZE:
After the cornbread has cooled you may freeze them in any of the
methods shown in my article

microwave will also zap them in 20 seconds.
