Soak:
1 1/2 cups diced dried plums
1 cup boiling water
1 teaspoon baking soda
Whisk:
1 2/3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 tablespoon ground nutmeg
1 cup packed brown sugar
2 eggs -- beaten
1/4 cup canola oil
1 teaspoon vanilla extract
1 cup chopped walnuts -- toasted
Total Time to maqke: 1 1/2 hrs.
Preheat the oven to 350F with rack in center position. Coat a 9x5"
loaf pan with nonstick spray.
Soak plums in boiling water with baking soda, 15 min.
Whisk together the flour, salt, baking powder, and nutmeg. Whisk
together brown sugar, eggs, oil, and vanilla in a large bowl; stir in
plum mixture, walnuts, and flour mixture until blended.
Pour batter into prepared pan; bake until a toothpick inserted in the
center comes out clean, 55-65 min. Cool brad in pan on rack 5-10 min
before removing.
