2 lb loaf:
1 1/3 cups freshly brewed coffee -- room temperature
1 1/4 teaspoons salt
2 tablespoons packed brown sugar
2 tablespoons vegetable oil
2 3/4 cups bread flour
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1 1/2 teaspoons instant yeast -- or bread machine yeast
1 cup raisins
Enjoy this rich, dark and delicious breakfast bread on Sunday morning
with a second cup of coffee.
Tip:
Brew extra-strong coffee and make sure to let it cool to room
temperature before using it; hot liquid will kill the yeast.
This bread can be made using a stand mixer or by hand as you would
any other bread using those methods.
Measure all ingredients except raisins into baking pan in the order
recommended by the manufacturer. Insert pan into the oven chamber.
Select Sweet Cycle.
Add raisins at the "add ingredient" signal.
Variation:
Substitute an equal amount of ground ginger for the allspice
