A tasty banana bread, where cranberries can be substituted for the
strawberries too.
*Strawberry Banana Bread*
2 eggs
1 cup sugar
1 ripe banana coarsely mashed
3/4 cup coarsely chopped strawberries
1/2 cup oil
3 tablespoons grated orange juice with some grated zest
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
Beat together the eggs,sugar, banana,strawberries, oil and orange
juice with zest until blended
Combine the dry ingredients and add to the wet ingredients.
Stir only until all ingredients are just moistened.
Divide the batter between 3 greased and lightly floured mini loaf
pans or 1 greased and floured loaf pan.
Place the pan (pans) on a cookie sheet and bake at 325F for about an
hour for large loaf or tested done for loaves
Toothpick inserted into the middle of the bread should come out clean
Cool for 15 minutes in pan and then remove from pans or pan.
Wrap and let sit overnight for best flavor and texture.
