1 pound poi -- (1 bag)
3/4 cup water
2 cups flour
1 cup sugar
2 teaspoons cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking powder
1 teaspoon salt
3 eggs -- slighty beaten
1 cup vegetable oil
2 teaspoons vanilla
1/3 cup chopped nuts
1/2 cup shredded coconut meat
1/2 cup raisins
Mix poi and water; blend well. In a lg bowl, combine flour, sugar,
cinnamon, nutmeg, baking powder and salt. Combine eggs, oil and
vanilla; add to flour mixture. Stir in poi; add nuts, coconut and
raisins. Pour into 2 greased loaf pans and bake for approx 45 min at 350F.
Makes 2 loaves
