To: Tim Shih The trick to freezing those 1 and 2 lb bulk packages of yeast is freezing. Remove just enough for a few weeks of baking and place in a tightly sealed, small jar (something the size of a baby food jar). Then seal up the original package well, place in a ziplock bag and place in the freezer. You'll find that it will last at least one year that way! Air and heat are yeast's enemies so always keep it tightly sealed and cool (and dry). Linda Rehberg
