                            Swiss Cheese Loaf

   1      Envelope      Dry Yeast ( Or 2 1/4 T.)
     1/4  Cup           Warm Water
   2 1/3  Cups          Flour, Divided
   2      Tablespoons   Sugar, Optional
   1      Teaspoon      Salt
     1/4  Teaspoon      Baking Soda
   1      8Oz.          Plain Nonfat Yogurt
   1      Large         Egg
   1      Cup           Reduced Fat Swiss Cheese
                        Sesame Seeds
                        Egg Wash -- See Bread Mach. Note

Combine yeast and warm water in a one cup liquid glass measure.   Let stand
5 minutes.  Combine yeast mixture, 1 cup flour and next 5 ingredients in a
large mixing bowl.  Beat at low speed with electric mixer for 30 seconds.
Beat on high for 2 minutes, scraping bowl.  Stir in remaining flour and
cheese, mixing well.  Spray pan with cooking spray. Brush top with egg wash
and sprinkle top of loaf evenly with sesame seeds.  Cover and let rise.
May not double in bulk. 
Bake 350F for 25 minutes

FOR BREAD MACHINE:  Place water, yogurt, egg, flour (bread)**, salt, baking
soda and yeast in that order.  Set on dough setting.  When machine beeps,
add cheese.  Remove dough and shape into 8 rolls, placing crosswise in loaf
pan.  Let rise.  Brush with beaten egg lightened with approximately 1
tablespoon water.  Bake as directed.

NOTES : Needed approximately 1/2 cup more flour when using bread machine.
Try adding 1 teaspoon of caraway seeds.
