The HearthKit is so wonderful I have offered to become their spokesperson! 
Perhaps the very best part is that when you open the oven to put in the 
bread the temperature always falls at least 25 degrees, but with the HK it 
doesn't drop at all!  It makes all baking better from roast chicken to 
chiffon cake!
