Pizza Dough Recipe

Thank you to Reggie for visiting, and for spreading the word! We welcome 
visitors. Our Pizza Dough recipe is as follows:

4 cups Flour (We use unbleached all-purpose)
1 teaspoon salt
1 1/2 cups warm water
2 teaspoons Active Dry yeast, rehydrated in 1/4 cup warm water

Knead all ingredients together until smooth - about 7 or 8 minutes. Place 
into a large, lightly oiled container, covered with plastic wrap and leave 
in a warm location to double in size.

Turn the dough out onto a floured surface, divide into 5-6 oz portions for 
individual pizzas and roll gently into balls. Place the balls onto an oiled 
tray, spray lightly with Pam, cover with plastic wrap to avoid drying out, 
and leave to rest for about 30 minutes. The yield is about 7 individual 8 
-10" pizzas.

We hand stretch the dough onto a wooden peel, cover with the pizza 
toppings, then cook directly on the floor of the oven (between 650 and 750 
degrees F).
