I have Bernard's Complete Book of Breads.  You're right, he does use 
quite a bit of yeast.  Also, I've found that none of the recipes seem 
to work out for me without some, usually, major revisions. There are 
a couple recipes (with my changes) that I use often, but, most I'm 
just not interested.
