Cherry Tomato Foccacia

*Cherry Tomato Foccacia*

1 recipe of your favorite  pizza or foccacia dough
good quality olive oil
1/4 cup sliced garlic
1 pint assorted colored cherry tomatoes (red, yellow, purple etc. 
different varities of cherry tomatoes)
1/4 cup grated parmesan cheese
3 Tbs fresh  basil leaves
1 tsp coarse salt

Make your dough, using your favorite recipe
While dough is rising, heat 1/4 cup olive oil in skillet and cook 
garlic only till softened being careful not to let it burn
Reserve oil and garlic.
Preheat oven to 350F
Brush a sheet pan with some plain olive oil
Spread dough on pan to an 8 x 12 rectangle.
Spread on the reserved garlic olive oil over top of dough
Let dough start to rise in a warm place and when dough has just begun 
to rise, place whole tomatoes on surface of dough, pushing lightly to 
fix them in place.
Then allow dough to dough rise double,surrounding the tomatoes.
When dough as risen double, bake until browned or about 25- 30+ minutes.
Sprinkle foccacia with the grated  cheese and bake another 10 minutes 
or till cheese melts
Remove foccacia from oven and sprinkle with the fresh snipped basil 
and coarse salt.
