For Sherry re Red Star - relax, you bought the right stuff! Open the bag, divide the yeast into 2 containers that seal tightly - I use glass Skippy Peanut Butter jars. Store one jsr in the freezer and oone in the refrigerator - use the refrigerated one - the frozen will keep for several years (but, you'll be making so much bread, you'll fly through it). Use a clean, dry measuring spoon. Rise and shine!
