Yes, you can freeze that bulk Red Star yeast. They recommend
removing a small amount, placing it in a small baby-food size jar and
keeping it handy in the fridge. The rest of the package should be
well sealed and placed in the freezer for extended keeping. It will
last at least one year that way!
To Joan, "Flour Power":
You are correct...California is one of those states that prohibits
the importation or sale of bromated flour. Pillsbury used to add
potassium bromate to their bread flour but if I'm not mistaken
they've discontinued the practice and now use ascorbic acid instead.
