BROMATED fLOUR Sam Hurwitz asked "what is bromated flour?" The term refers to flour that has Potasium Bromate or Calcium Bromate added as a oxidant or dough conditioner. These additives compensate for differences in maturity of the flour and improve the rheological propprties of the dough. Although Bromates are very common , Iodates, and peroxides are also used.
