Bread sticking

Lilia Prescod writes about the subject problem. There are several reasons
why breads stick and Lilia is on the ball with respect to taking the bread
out of the pan too soon. If the bread machine has a cool down cycle, the
bread should be allowed to cool for at least 15 minutes in the machine.
That will remove some of the moisture from the loaf and cause it to shrink
a little. When that happens, it will be easier to remove the loaf from the
pan. If she has a Zoji, using a Finnish Pan would allow the loaves to come
sliding out of the pan without sticking at all. Another suggestion that
might help with a sweet loaf, such as Hawaiian breads, is to lightly spray
a release agent such as PAM on the interior of the bread pan and the
kneading hardware.
