Bread-Bakers v099.n055.6

I have been baking bread by hand for a number of years. I recently tried
using an old Sunbeam mixmaster for mixing and kneading. The machine has a
pair of kneading blades instead of the one blade in common use today. The
dough rides up on the blades and will even coat the mixmaster itself if I
don't turn it off. Does anyone know what causes this? Secondly, does anyone
know of an attachment that would permit the use of a single blade?
