1-1/2 tbs yeast
1 tbs sugar
1 c warm water
1 c warm milk
2 c flour
1 tbs salt
3 tbs melted unsalted butter
3-4 c flour
Mix first 5 ingredients and beat till smooth. Cover with plastic wrap and
let rise 1 hr. Add salt, butter and 1 c flour to sponge. Beat in
remaining flour 1/2 c at a time till soft dough forms. Turn out onto
floured surface; knead 3-5 min. Place in greased bowl, cover and let rise
2 hr. Divide dough into thirds. Form into fat ovals, pinching ends to
points. Place on greased pan, cover loosely with plastic wrap. Let rise 1
hr. till double. Mix 1 egg yolk with 1 tbs water, brush onto
loaves. Sprinkle with sesame seeds. Slash each loaf 3 times. Bake 10 min
@ 425F, then lower temp to 375F and bake 25-30 min longer.
