I've found the best method is to put an old pan (with sides) on the bottom shelf of the oven while its preheating. When you put the bread in to bake, pout about a cup of BOILING water in that pan and shut the door. You'll get wonderful steam without lowering the oven temperature or opening the oven door repeatedly. Evie Werthmann
