I have been using the King Arthur sourdough starter for a few weeks and am very pleased with the results. However, I simply cannot achieve the "chewy" texture that I love in artisan breads. I have tried the biga technique and now the sourdough, but the crumb I seek remains elusive. If you know how to achieve a chewy texture, please let me know. Ellen Lee
