The weight of a cup of flour (regular white flour bleached or unbleached)
is usually 4 or 4 1/2 oz by weight. For bread recipes that only use cup
measurements I usually weigh out 4 1/2oz per cup and then hold some back
when adding the flour and see if I need all of it or not. Some recipes seem
to be assuming more like 5oz cups ....
