re: preheating the oven Coming out of Lurkdom here to announce that yesterday I made the Rosemary Walnut loaves in the new issue of Cooking Light, which called for preheating the oven to 400F, then reducing it to 375F upon placing the loaves into it. They came out great and tasted fabulous, though I did lose some dough "rise" when slashing the tops with my Exacto knife. Guess it wasn't as sharp as I thought it was!
