Sandy, I use the same yeast, and have found that I can have a perfectly risen bread with 1 tsp of SAF instant. I was trying to minimize the yeast flavor in the final product, so I kept reducing the amount shown in the recipes to see if it made any difference in the rise of the loaf. It didn't. The bottom line is that the amount of yeast you put in the recipe is not very critical. Experiment, and you'll see. Harry in Maryland
