Oat Bran Fruit Muffins
1 1/2 cup oat flour (In a blender, pulverize regular or instant oats.)
3/4 cup flour
1 Tablespoon baking powder
1/2 cup honey
1/2 cup skim milk
1/4 cup egg beaters or (1 egg beaten)
1/4 cup margarine (low fat) melted
Any fruit - 1 apple chopped, 3/4 to 1 cup raisins, dates, blueberries, 1
banana, 1 peach, or nuts.
Mix dry ingredients. Mix liquids together. Add to dry ingredients. Stir
until moistened. (Do not over mix.) Add fruit. Bake at 400 F for 15-20
minutes until lightly browned.
Makes 12 medium size muffins or 24 mini-sized muffins.
