I have used wine in two bread recipes,and was especially pleased with the 
red wine used in Focaccia (Reinhart's Pizza book)

Question is : What role does wine play in the chemical makeup of bread ? I 
don't assume we just go willy-nilly into the night sloshing wine here and there
