Rich in NC mentions that the recipe for "Pain a l'Ancienne" would be 
available only by buying Peter Reinhart's Bread Baker's Apprentice or 
finding a newspaper article in which the recipe is reprinted.  Actually 
there is at least one other way--find the book in your local public 
library.  My own library owns eight copies of this book.
