I have used one for several years, and will swear by it! Even in the worst of the summer in my (very hot) NYC kitchen, the Bell keeps the butter soft and spreadable. I am very diligent in changing the water, sometimes twice a day in the worst weather, and I have never had the butter go 'off' or rancid. Hope this helps, Doris
