I am also a lurker with a butter bell that I have had for years. I love it. But I live in the high desert of Nevada. It can go up to 120 degrees here in the summer and if I didn't change the water at least every other day the butter would mold and spoil. Been there, done that. It is a good idea to change the water as it usually will keep the butter fresher. I just wish that I could find a larger bell. Judi
