I am not sure what you'll think of my answer, but I find this bread
turns out very well with dry yeast in a bread machine. First, the
shape of the pan is short and high, just as you desire. Secondly, the
texture comes out fine. Give it a try. I say that as someone who
bakes most of my breads with sourdough by hand--but not that one. I
got the recipe from European Breads for the Bread Machine.
