Festive Fruit Bread

1/2 cup vegetable oil
1 cup sugar
2 eggs
3 bananas -- mashed
2 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons milk
1/2 teaspoon vanilla
1 cup finely chopped nuts
1/2 cup dried cranberries -- or chopped apricots
1. Preheat oven to 350F. In large bowl beat together oil and
sugar. Add eggs and bananas; mix well.
2. In separate bowl sift together flour, baking powder and salt; add
to egg mixture. Stir in milk and vanilla; mix well. Stir in nuts
and cranberries.
3. Place in greased 9 x 5 x 3" loaf pan. Bake 1 hr or until
toothpick inserted in center comes out clean.
