I have had the same experience with no-knead bread, and I read somewhere that, at the end of baking, you should remove it from the Dutch oven, set it on the oven rack, turn off the oven, leaving the door cracked slightly and allow it to cool gradually in the warm oven. I tried that, along with extending the baking time by 5 minutes and it seemed to work. I also read many cautions about slicing the bread too soon. It must be thoroughly cool. Mary
