2 cups whole wheat pastry flour
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup pumpkin puree -- (not pumpkin pie mix)
3/4 cup brown sugar, packed
1/2 cup rice milk -- or almond milk, (or any milk)
1/4 cup canola oil
1 teaspoon vanilla
1 cup raisins -- or 1 c chopped nuts, optional
1. Preheat the oven to 350F. In a large bowl sift together the
flour, baking powder, salt, cinnamon and nutmeg.
2. In separate bowl, combine the pumpkin puree, brown sugar, milk,
oil and vanilla. Stir ingredients to combine.
3. Add the wet ingredients to the dry ingredients and stir until
just combined. Stir in optional raisins or nuts.
4. Spray a standard (9 x 5") loaf pan with cooking spray. Pour
the batter into the pan. Bake for 40 min or until a toothpick
inserted in the middle comes out clean.
5. Cool completely before removing from the pan. Slice, and serve.
