Check out "Flatbreads and Flavors" by Alford and Duguid. It's 
subtitled "A Baker's Atlas" and that pretty much describes what it 
does. After the obligatory ingredients-equipment-techniques section, 
they go from section to section of the world presenting the regional 
flatbreads and recipes for common accompaniments.
