Someone asked about what should a person with celiac disease do for 
bread making. Here is some info I located.

Most gluten-free flour mixes rely on rice flour or cornstarch, which 
can lead to a gummy texture. But the main ingredient in Bob's Red 
Mill Gluten Free All-Purpose Baking Flour is garbanzo flour. Of 
several brands tried in a muffin recipe, Bob's offered the best 
flavor, texture, and color.
