Bread, Irish Soda Bread with Dried Fruit and Caraway

1 tbsp unsalted butter
4 1/2 C white whole wheat flour
1/2 C currants
1/2 c golden raisins
1 Tbsp caraway seeds
1 tsp baking soda
1 tsp kosher salt
2 1/4 c buttermilk

Total: 1 1/2 hrs (including 30 min cooling time)
Preheat oven to 425F.
Warm a 9" cast-iron skillet in oven for 5 min. Remove the pan and add
butter, swirling to coat the bottom and sides.
Combine flour, currants, raisins, carraway seeds, baking soda and
salt in a lg bowl. Gradually add buttermilk, stirring just until the
flour is fully incorporated. Do not overmix. The dough should be
sticky and a little shaggy.
Transfer the dough to the prepared pan, using a spatula to spread it
evenly. It's OK if it doesn't reach all the way to the sides, Use a
sharp knife to score a deep X in the top of the loaf.
Bake until cooked through and golden brown, about 40 min. Let cool in
the panfor 5 min, then transfer to a wire rack to cool for at least
30 min before slicing.
Each slice is 2" thick
