We've made these several times in the past week. They've been a big
hit. We used a silicone muffin pan on top of a shiny metal baking
sheet. Baked 15 min at 400F.

Muffins, Easy Homemade Cornbread

1 cup cornmeal
120 grams all-purpose flour -- (1 C)
1/3 cup sugar -- granulated
1/2 teaspoon salt
4 teaspoons baking powder
1 egg
1 cup milk
1/4 cup corn oil -- or vegetable oil
These homemade Southern cornbread muffins are moist, fluffy, and easy
to make from scratch. This recipe yields a savory muffin with just
enough sweet to complement the cornmeal. They are best served fresh
from the oven.
Preheat oven to 400F.
Combine cornmeal, flour, sugar, salt, and baking powder in a large
bowl and whisk to break up any lumps.
Combine egg, milk, and oil in a medium bowl ans whisk to combine.
Add wet ingredients to dry and stir until just combined. Do not
overmix. A spatula works well here.
Pour batter into a greased muffin tin, filling each cup about
halfway. Bake for 13 - 17 minutes or until toothpick inserted in the
center comes out mostly clean. Do not overbake!
Serve warm.
