2 lb Loaf: -- (1 Lb Loaf);
4 cups bread flour -- (3C)
7/8 cup milk -- (3/4C)
5/8 cup water -- (3/8C)
2 tablespoons butter -- (1 1/2T)
3 tablespoons brown sugar -- (2 1/2T)
1 teaspoon nutmeg -- See Note 1, (3/4tsp)
1 teaspoon allspice -- See Note 1, (3/4tsp)
1 teaspoon ginger -- See Note 1, (1/4tsp)
2 teaspoons salt -- (1 1/2tsp)
2 1/2 teaspoons yeast -- (2tsp)
1/2 cup plumped raisins -- Note 2, (1/4C)
This bread is as flavorful as it is incredibely fragrant while it is
baking. Now, you can use the spices indicated below or you can try
this: grind together, if you have a grinder, 1 tsp each of cloves,
nutmeg and ginger; then add 1T of ground cinnamon. It's called Spice
Parisienne.
Note 1: Or add the Spice Parisienne in the corresponding amounts: 3
tsp. or (2 1/4 tsp)
Note 2: Although we usually make it without raisins, they are an
option. Plump the raisins before adding them.
Load and bake according to your bread machine's instructions on the
rapid or regular setting.
