To Matt:

We find that the easiest way to relax a bread dough, specifically 
pizza dough, is to simply remove it from the bread pan, place it on 
the counter, cover it with a bowl or towel and just let it rest for 
15 minutes.  It will be much easier to roll out after it has relaxed 
a bit.
