The easiest and best way to shape a pan loaf is to roll the dough out into 
a thin, 5 mm or so, rectangle and roll up the rectangle tightly to make a 
cylinder which you then place in the pan, seam side down. This gives a 
superbly smooth top and a uniform proof.
