The Bread Ovens of Quebec, by Lose Boily and Jean-Francois
Blanchette, ISBN 0-660-00120-9. It has a French edition, ISBN
0-660-00004-0. It is published by the National Museum of Canada, Catelogue
No. NM92-48/1979.
Not only does it have directions, diagrams and photos, but it has
techniques for baking with these ovens. of course, one of the most
fascinating aspects of the book is the description of the folklore and
material culture centering on these ovens.
