Pumpkin Gingerbread

    This is very good.  I wish I could give proper credit for this recipe, 
but I can't remember where I found it.

Pumpkin Gingerbread

2/3 cup butter or margarine
2/3 cup brown sugar, packed
2 eggs
1 cup canned pumpkin
1/2 cup light molasses
1/2 cup milk
2 1/2 cups flour
1 tablespoon fresh grated ginger or 1 tsp. dried ground ginger
1 1/2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
scant 1/4 tsp. orange oil (optional)

    Cream butter and brown sugar in the mixer.  Add eggs and pumpkin and mix 
a couple minutes.  Add remaining ingredients and beat until smooth.  Spread 
mixture in a 9 X 13 pan sprayed with nonstick spray and bake at 350F for
35-40 minutes.
