My mom has been searching for a recipe for flatbread crackers, but has been
having no luck. What she described is a flat hard cracker (sometimes sold
commercially in roughly 6" X 2" long strips) with sesame or poppy seeds,
garlic or onion and other spices on top.
In Sunset magazine issue Jan.1975, they featured recipes from an Armenian
lady in Los Angeles with this description: "She makes it the most
traditional way using all-purpose flour but whole wheat flour gives an extra
nut-like flavor that's become a tasters' favorite. Regardless of which
version you make, the big, bubbly rounds, heavily crusted with sesame
seeds, are thinner and more tender than the commercially made Armenian
cracker bread called lahvosh. Each of the rounds must be hand-rolled until
very thin; but the dough is easy to handle and two breads can bake at once."
If this sounds like what you are looking for I will get you the recipes.
Happy baking!
