Hi Sally,
Add a very small amount of potato flakes or potato flour to your
recipe to keep your bread soft.  Potatoes does the same thing that
Emulsifiers (Bread Softeners) do in Commercial Breads.  If you don't
have one of the above mentioned ingredients, boil a small potato and
use that.
