Barbara Moore asked what temperature bread should reach in order to make sure that it is done. The magic number is 190F minimum, Barbara. I shoot for 195F to 200F, depending upon the type of bread. I sometimes use this trick: If the temperature is close to 190F, but I don't want the loaf to brown anymore, I turn off the oven and leave the loaf in for a few minutes.
