In Maggie Glezer's book, Artisan Baking, she prescribes baking herb slabs on a stone with parchment paper under the bread. After 5 minutes the bread is turned over and the paper removed. The bread is baked for additional 20 minutes, 10 minutes on each side. This works very well for a crusty bread.
